Pineapple Rice


  • 1 pineapple
  • 4 cups cooked brown rice
  • 4 mushrooms
  • 4 eggs
  • 1 cup fat free greek yogurt
  • 2 french onions
  • 1 cup cooked beef
  • 1/2 cup soy sauce
  1. Slice mushrooms and onions and cook on sauce pan with greek yogurt on medium heat. 
  2. When mushrooms are partially cooked, add the rest of the ingredients, except for the pineapple. Stir occasionally.
  3. Meanwhile, cut the pineapple in half and core it, but leave some of the pineapple inside for you to eat with the rice
  4. Keep the food on the pan until the rice has soaked up the greek yogurt and soy sauce (about 5-10 minutes). Stir occasionally.
  5. Finally, place the rice into the halves of the pineapple and scrap the sides of the pineapple as you eat. Or, slice some pineapple onto the rice.
Makes about 4 servings
