Eggplant Bites

Eggplants can be rather bitter, I suggest brining the eggplant first.

  • 1 eggplant
  • Olive oil
  • Any seasonings or ingredients you desire (I used my pesto sauce, sun dried tomatoes, cottage cheese, hot house tomatoes, egg, apples and cinnamon)

  1. Preheat oven at 375 F
  2. Slice Eggplant and put on wax paper on a baking sheet
  3. Brush both sides of eggplant slices with olive oil and bake for 10-15 minutes
  4. Take eggplants out of oven and flip them over. Top with whatever seasonings or ingredients you desire. Then bake them for another 10-15 minutes
