If you like your cookies to be chewy and cake-like, this recipe is for you!
Ingredients:
- 1/2 cup oats
 - 1/2 cup almond meal
 - 1 banana
 - 1 egg
 - Vegan Dark Chocolate chips
 - 1/4 tsp baking powder
 - 1/4 tsp baking soda
 - 1tsp vanilla
 
- Combine all ingredients except for chocolate chips.
 - Shape and flatten batter on a plate (my cookies were about 3 inches in diameter).
 - Top with as many chocolate chips as you like
 - Microwave high 45 secs. Then another 25 secs (times may vary depending on microwave)
 
Makes about 5-6 cookies
