2 minute - Microwave Oatmeal Cookies

If you like your cookies to be chewy and cake-like, this recipe is for you!

Ingredients:

  • 1/2 cup oats
  • 1/2 cup almond meal
  • 1 banana
  • 1 egg
  • Vegan Dark Chocolate chips 
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1tsp vanilla 
Directions:
  1. Combine all ingredients except for chocolate chips. 
  2. Shape and flatten batter on a plate (my cookies were about 3 inches in diameter). 
  3. Top with as many chocolate chips as you like
  4. Microwave high 45 secs. Then another 25 secs (times may vary depending on microwave) 

Makes about 5-6 cookies
