Chocolate Almond Pulp Protein Muffins

I made these using the leftover almond pulp from my homemade almond milk recipe
Ingredients:

  • 1 cup packed almond pulp 
  • 1 scoop chocolate protein
  • 2 tbsp chia seeds
  • 1 tbsp flax
  • 5 tbsp almond milk
  • 1/2 cup oats
Directions:
  1. Mix all ingredients in a food processor until completely combined
  2. Bake in oven at 350F for about 15-20 minutes or until it passes the toothpick test

Notes:
Pulp: to the leftovers from the homemade almond milk
Toothpick test: When you insert a toothpick in the middle of the muffin and it comes out clean
