Nacho Bowls


Ingredients:
  • 1 whole wheat tortilla
  • 1/2 cup ground beef
  • 1/4 cup mozzarella cheese
  • 2 green onions
  • salt (optional)
  • olives (optional)
I used sweet potato in my recipe, but that's completely optional

Directions:

Cut tortilla in half and round the edges off.

Preheat oven to 375F and place tortilla shells into a flipped-over muffin tip (see picture below). Sprinkle them with a little water to shaper them more easily. Sprinkle with salt if desired.

Bake for 10 minutes

While those are baking, cook the ground beef and caramelize the onions. Grate the cheese and add them to the beef when they are almost done cooking so that the cheese melts. 

Add salt and olives if desired. ( I diced some sweet potato and added them on top).

Makes 2 servings.
