- 6 carrots
- 1 1/4 cup cashews
- 1 cup dried cranberries (or any dried fruit- dates would be good)
- 1 tsp cinnamon
Topping:
- plain fat free greek yogurt
Directions:
- Grate carrots (I manually grated them, I think you could use a food processor but I didn't try it)
- In food processor, mix all the ingredients until it becomes the desired consistency (the longer it is mixed, the more gooey it becomes)
- Drop tablespoons of the batter into cupcake paper, or you can put the whole batter into a pan.
- Chill in the fridge for about 10 minutes and Enjoy! You can also top them with greek yogurt
Makes about 12 small bars or 10 cups.
