Clean and Raw Carrot Cake

Ingredients:

  • 6 carrots
  • 1 1/4 cup cashews
  • 1 cup dried cranberries (or any dried fruit- dates would be good)
  • 1 tsp cinnamon
Topping:
  • plain fat free greek yogurt 
Directions:
  1. Grate carrots (I manually grated them, I think you could use a food processor but I didn't try it)
  2. In food processor, mix all the ingredients until it becomes the desired consistency (the longer it is mixed, the more gooey it becomes) 
  3. Drop tablespoons of the batter into cupcake paper, or you can put the whole batter into a pan.
  4. Chill in the fridge for about 10 minutes and Enjoy! You can also top them with greek yogurt 
Makes about 12 small bars or 10 cups.
