This is a great way to get your daily amount of vegetables in! You can use any vegetables and seasonings, or you can also add in whatever meat you like. Here's what I used:
- 3 eggs
- 1/4 cup brocoli
- 1/4 cup spinach
- 1 tsp thyme
- 1 tsp sage
- 1 tsp rosemary
Directions:
- preheat oven at 350 degrees
- In food processor, pulse broccoli and spinach first, then add the rest of the ingredients
- oil a muffin tin and bake for 15 minutes (or until muffins have held their shape)
