Vegetable Cups

 This is a great way to get your daily amount of vegetables in! You can use any vegetables and seasonings, or you can also add in whatever meat you like. Here's what I used:

Ingredients:

  • 3 eggs
  • 1/4 cup brocoli
  • 1/4 cup spinach
  • 1 tsp thyme
  • 1 tsp sage
  • 1 tsp rosemary 
Directions:
  1. preheat oven at 350 degrees
  2. In food processor, pulse broccoli and spinach first, then add the rest of the ingredients
  3. oil a muffin tin and bake for 15 minutes (or until muffins have held their shape)
