Cauliflower and Spinach Nuggets

Just in time for Christmas season! These green nuggets can be paired with a red sauce such as ketchup, or sweet thai chill sauce in order to create Christmas colours. These are perfect conversation starters for you Christmas Party because they look and taste delicious, not to mention they are loaded with vegetables and are easy to make!


  • 2 cups cooked cauliflower florets
  • 2 large eggs
  • 2 cups spinach 
  • 1/2 cup harvati cheese 
  • salt and pepper to taste 
  • 1/2 cup almonds

  1. Preheat oven to 400F
  2. Cook cauliflower until tender but not mushy. Drain well and dry with paper towel. 
  3. Place cauliflower and the rest of the ingredients except for almonds into food processor and pulse until all ingredients are mixed together. Then add almonds and pulse for about 10 seconds, or until they become little bits
  4. Place 1 tablespoon of mixture on baking sheet covered with parchment paper. Bake for 16-18 minutes or until golden brown, flipping each nugget halfway into cooking time.

Makes about 4 dozen nuggets
