Cauliflower Rice


  • 1 chicken breast
  • greek yogurt
  • parsley
  • basil
  • lemon
  • cauliflower
  • pineapple

  1. mix greek yogurt, parsley, basil and lemon together in a bowl. cut the chicken breast into slices if you desire and coat it with the mixture.
  2. cook chicken on medium heat for about 5 minutes on one side then flip and cook the other side for about 3 minutes (until there is no pink on the inside).
  3. in a food processor, pulse cauliflower until it looks like snow
  4. add pineapple to the rice and serve with chicken. you can add lettuce to the rice if you desire
