Black Bean Brownies

An old recipe that I realized I didn't post on my blog!



Ingredients:
1 can black beans
2 eggs
1/4 cup cocoa
3 tbsp olive oil
1/4 cup truvia
1/4 cup honey
1tsp baking powder
1/8 tsp salt
1tsp vanilla

You can sub the cocoa powder with chocolate protein!
Blend all ingredients and bake at 350F

Oat Fudge Bars - Tastes like Starbucks!

CLEAN OAT FUDGE BARS. TASTES LIKE STARBUCKS!!




I remember trying these at Starbucks and I would crave them so much. I never really bought them though because Starbucks is pretty pricey and they weren't really healthy anyways. I recently had the craving for them again so I made two batches! One was a not-so-clean version that I gave to my cheer team, and the other one (displayed in the picture) is a cleaner version of this recipe :).


Oat Layer:
  • 2 cups almond flour
  • 1 cup coconut butter
  • 2 + 1/2 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup coconut oil
  • 1 + 1/2 cup truvia or coconut sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Directions:
  1. Cream the butter, sugar and eggs together.
  2. Combing all the dry ingredients in a separate bowl.
  3. Mix the wet and dry ingredients together. 
  4. Press 2/3 of the mixture into a 8x8inch pan lined with parchment paper and bake at 350F for 25-30 mins or until golden brown. 


Fudge Layer:
  • 1 Cup Peanut Butter
  • 4 Tbsp agave or pure maple syrup
  • 2 Heaped tbsp cacao powder
  • 1/3 Cup coconut oil, melted

Directions:

  1. Melt your coconut oil and add to a mixing bowl with all the other ingredients. 
  2. Stir until a very smooth paste! 
  3. Pour on top of bottom layer when it is done baking. 
  4. Crumble the rest of the Oat layer on top of the fudge layer. 
  5. Place in the freezer for 30 minutes to set. Slice into little squares and enjoy!

Flourless Mint Fudge Cookies


 Ingredients:
  • 2 1/2 cups @tryabouttime vanilla protein powder
  • 1/2 cup honey
  • 3/4 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 4 large egg whites
  • 1 tbsp pure vanilla extract
  • 1 mint chocolate questbar
Directions:
  1. Preheat the oven to 350°F.
  2. Line two baking sheets with parchment paper.
  3. In a bowl, whisk together the protein powder, cocoa powder and salt.
  4. Stir in the vanilla and egg white and whisk just until the batter is moistened.
  5. Melt quest bar in microwave for 20 seconds and break into pieces. Fold pieces into mixture.
  6. Scoop the batter onto the baking sheets and bake for 8-10 minutes, be careful not to over cook!
  7. Let the cookies cool completely on a rack, and store in an airtight container for up to 3 days

Mint Chocolate Klondike Bar


Ingredients for filling:
  • 1 banana
  • 4 medjool dates
  • 1 mint chocolate quest bar
 chocolate spread:
  • 4 tbsp coconut oil
  • 1 tbsp cocoa
Directions:
  1. Puree banana in food processor or blender
  2. Heat up questbar in microwave for 20 seconds. Break up the bar into small pieces and fold into banana mixture
  3. Pour mixture into a rectangular dish lined with parchment paper and freeze for about 30 minutes or until it is completely hardened.
  4. Take the frozen mixture out of the dish and place on another parchment paper. Pour the chocolate spread on top and refreeze for another 10 minutes. Enjoy!

Protein Brownies

Protein Brownies
Only 8 ingredients! quick and easy recipe!

Probably the best brownies I've ever made!! o.0....yes definitely the BEST brownies I've ever made :D
And what's even better is that they're filled with protein!!
They are so moist and delicious that I almost finished them all...right before cheer practice :p





 Ingredients:
3/4 cup chocolate protein powder by @tryabouttime
1/4 cup and 1 tablespoon honey
1 tablespoon cocoa
1/2 cup peanut butter
1/2 tsp baking soda
1/2 tsp salt
3 tablespoon egg whites (egg white of one egg)
1/2 tsp vanilla
1/2 cup almond milk (may need to add more or less depending on your protein)

Directions:
  1. Preheat oven at 350 F
  2. Mix all ingredients together
  3. Place in a loaf pan or a 8x8 baking dish lined with parchment paper
  4. Bake for about 30 minutes or until toothpick comes out clean
