Cauliflower Mashed Potatoes (Shepherd's pie)



I hate potatoes, but I wanted to create a low carb recipe for potato lovers. It ended up turning out really well!
My friend hates cauliflower, but I had him try this recipe without telling him how I made it. He said it tasted good and he couldn't believe there was cauliflower in it!
And yes there are mint leaves on top, but that's because I didn't have any parsley to garnish :p

Cauliflower Mashed Potatoes:
Ingredients:
  • 1/2 cup 1% cottage cheese
  • 4 fresh basil leaves
  • 1 clove of garlic
  • pinch of pepper

Directions: 
  1. Clean and cut cauliflower into small pieces. Boil cauliflower in a large pot until they become soft. Then, drain the water and pat the cauliflower very dry with a towel (this will prevent your cauliflower mashed potatoes from becoming watery)
  2. In a food processor or blender, puree the cauliflower with cottage cheese, basil, garlic and pepper. You can add any other seasonings if you like
  3. Garnish with chives or parsley and enjoy! 
Bottom of Shepherd's pie:
Ingredients:

  • ground beef
  • zucchini
  • peas
  • carrots
  • seasonings of your desire (oregano, thyme, salt, pepper)
Directions: 
  1. Dice vegetables of your desire and cook with ground beef in a sauce pan on medium heat. Add any seasonings you would like
  2. Place on plate and top with cauliflower mashed potatoes for a Shepherd's pie
