I hate potatoes, but I wanted to create a low carb recipe for potato lovers. It ended up turning out really well!
My friend hates cauliflower, but I had him try this recipe without telling him how I made it. He said it tasted good and he couldn't believe there was cauliflower in it!
And yes there are mint leaves on top, but that's because I didn't have any parsley to garnish :p
Cauliflower Mashed Potatoes:
Ingredients:
- 1/2 cup 1% cottage cheese
- 4 fresh basil leaves
- 1 clove of garlic
- pinch of pepper
Directions:
- Clean and cut cauliflower into small pieces. Boil cauliflower in a large pot until they become soft. Then, drain the water and pat the cauliflower very dry with a towel (this will prevent your cauliflower mashed potatoes from becoming watery)
- In a food processor or blender, puree the cauliflower with cottage cheese, basil, garlic and pepper. You can add any other seasonings if you like
- Garnish with chives or parsley and enjoy!
Bottom of Shepherd's pie:
- ground beef
- zucchini
- peas
- carrots
- seasonings of your desire (oregano, thyme, salt, pepper)
Directions:
- Dice vegetables of your desire and cook with ground beef in a sauce pan on medium heat. Add any seasonings you would like
- Place on plate and top with cauliflower mashed potatoes for a Shepherd's pie
