Spaghetti Squash (vegetarian)

Here's one way to get your vegetables in while satisfying your craving pasta with this low-carb recipe!

Ingredients:

  • 1 spaghetti squash
  • 1 red pepper
  • 1 handful of spinach
  • 1 chicken breast (optional)
Directions:
  1. Wash and then poke holes into the squash with a knife (this prevents the squash from exploding in the microwave)
  2. Put the squash in a microwave-safe dish and cook it for 4-5 minutes on high heat for every pound. My squash weighed 2 pounds, so I cooked it for 10 minutes. Halfway through the cooking time, rotate the squash in the microwave
  3. While the squash is cooking, chop up the pepper and spinach (and cook the chicken breast)
  4. When the squash is ready, slice it in half length-wise and take out the seeds. Use a fork and scrap the squash into spaghetti strands
  5. Place squash on a plate and top with pepper, spinach (and chicken). Enjoy!
