Here's one way to get your vegetables in while satisfying your craving pasta with this low-carb recipe!
Ingredients:
- 1 spaghetti squash
- 1 red pepper
- 1 handful of spinach
- 1 chicken breast (optional)
Directions:
- Wash and then poke holes into the squash with a knife (this prevents the squash from exploding in the microwave)
- Put the squash in a microwave-safe dish and cook it for 4-5 minutes on high heat for every pound. My squash weighed 2 pounds, so I cooked it for 10 minutes. Halfway through the cooking time, rotate the squash in the microwave
- While the squash is cooking, chop up the pepper and spinach (and cook the chicken breast)
- When the squash is ready, slice it in half length-wise and take out the seeds. Use a fork and scrap the squash into spaghetti strands
- Place squash on a plate and top with pepper, spinach (and chicken). Enjoy!
