Ingredients:
- 1 egg
- eggplant
- olive oil
- tomato
- cottage cheese
- homemade Pesto Sauce
Directions:
- Preheat oven to 375F
- Slice eggplant and tomato
- Brush olive oil on both sides of the sliced eggplant. Top with pesto sauce, tomato, cottage cheese and bake in oven with parchment paper for 10-15 minutes
- While it is baking, cook an egg on medium heat in saucepan
- Place egg on top of eggplant when they are done being cooked
