Eggplant Eggs Benedict

Ingredients:
Directions:
  1. Preheat oven to 375F
  2. Slice eggplant and tomato
  3. Brush olive oil on both sides of the sliced eggplant. Top with pesto sauce, tomato, cottage cheese and bake in oven with parchment paper for 10-15 minutes
  4. While it is baking, cook an egg on medium heat in saucepan
  5. Place egg on top of eggplant when they are done being cooked
