I love this recipe because it has protein from beans and its flour-less!
Ingredients:- 1 can black beans, rinsed and drained (15 oz)
- 2 eggs
- 1/4 cup cocoa powder
- 3 tbsp olive oil
- 1/4 cup truvia
- 1/4 cup honey
- 1 tsp baking powder
- 1/8 tsp salt
- 1 tsp vanilla
- Peanut butter
- vegan dark chocolate chips
Directions:
- Preheat oven to 350F
- Blend beans in food processor until it is a smooth consistency. Blend the rest of the ingredients together, except peanut butter and chocolate chips, until smooth
- Pour batter in lightly greased 8x8inch pan and bake for about 25 minutes, or until toothpick comes out clean
- Put dollops of peanut butter on top, and sprinkle chocolate chips. Let it sit for about 5 minutes to melt the toppings. Then, use a knife to swirl the peanut butter with the chocolate to create a marble effect on top.
Note:
To create a marble effect on the inside of the brownies, swirl peanut butter into batter before you put it into the oven.
