Ingredients:
- 1 pineapple
- 4 cups cooked brown rice
- 4 mushrooms
- 4 eggs
- 1 cup fat free greek yogurt
- 2 french onions
- 1 cup cooked beef
- 1/2 cup soy sauce
Directions:
- Slice mushrooms and onions and cook on sauce pan with greek yogurt on medium heat.
- When mushrooms are partially cooked, add the rest of the ingredients, except for the pineapple. Stir occasionally.
- Meanwhile, cut the pineapple in half and core it, but leave some of the pineapple inside for you to eat with the rice
- Keep the food on the pan until the rice has soaked up the greek yogurt and soy sauce (about 5-10 minutes). Stir occasionally.
- Finally, place the rice into the halves of the pineapple and scrap the sides of the pineapple as you eat. Or, slice some pineapple onto the rice.
Makes about 4 servings
