Clean Cauliflower Crust Pizza

IMPORTANT: read notes below before you try this recipe


Ingredients (just for the crust):
  • 1 small cauliflower
  • 1/2 cup mozzarella cheese 
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1-2 large eggs. (1 egg if you yield 1 cup of cauliflower 'snow'. 2 eggs if you yield 2 cups of 'snow')
Directions:

Preheat oven to 450F.
Cut the cauliflower stems off and place the florets into food processor:



Pulse until cauliflower looks like snow:


Place the cauliflower 'snow' in a towel and ring out the water. Try to ring out as much water as possible in order to ensure your crust doesn't fall apart


Dry the food processor and place the cauliflower 'snow' back in it. Add the rest of the ingredients.

Place dough on oiled parchment paper on a baking sheet and use your fingers to flatten the dough into a thin layer:


Bake in the oven for about 10-12 minutes or until golden brown. Place on cooling rack for 5-10 minutes. Add whatever toppings you desire!

For my pizzas, I had one with tomatoes, olives and orange peppers. The other pizza had orange peppers, extra cheese and sun dried tomatoes



Notes:
-Cauliflower 'snow' refers to the pulsed cauliflower bits
-dough will not be as held together as regular dough
-this will not taste like regular dough as it is a clean version
