Broccoli and Carrot Frittata


Ingredients:

  • 1/2 cup brocoli
  • 1 carrot
  • 1/4-1/2 cup milk (depends on the consistency you desire *see notes*)
  • 9 eggs
  • your desired seasonings *see notes for the seasonings I used*
  • olive oil
Directions:
  1. Preheat oven to 350 degrees F
  2. Wash broccoli and carrot and peel the carrot. Then chop up the broccoli and carrot into pieces and set aside
  3. In another bowl, whisk together the milk, egg and seasonings. Mix the broccoli and carrot into the egg mixture
  4. Oil an 8inch by 8inch pan and pour the batter in. Bake for 50 minutes or until egg is completely cooked

Notes:
  • the frittata holds its shape better with less milk
  • the seasonings I used were thyme, sage, dried oregano and marjoram 
  • you can use whichever vegetables you desire
