Ingredients:
- 1/2 cup brocoli
- 1 carrot
- 1/4-1/2 cup milk (depends on the consistency you desire *see notes*)
- 9 eggs
- your desired seasonings *see notes for the seasonings I used*
- olive oil
Directions:
- Preheat oven to 350 degrees F
- Wash broccoli and carrot and peel the carrot. Then chop up the broccoli and carrot into pieces and set aside
- In another bowl, whisk together the milk, egg and seasonings. Mix the broccoli and carrot into the egg mixture
- Oil an 8inch by 8inch pan and pour the batter in. Bake for 50 minutes or until egg is completely cooked
Notes:
- the frittata holds its shape better with less milk
- the seasonings I used were thyme, sage, dried oregano and marjoram
- you can use whichever vegetables you desire
