Orange Chicken

Recipe from David Rocco, but I omitted the salt, black pepper, flour, butter, almonds, and mint/basil

  • 2 lbs skinless chicken breasts
  • 3 tbsp olive oil
  • 2 whole garlic cloves
  • Zest and juice of 1 orange
  1. Cut up chicken breasts into bite-sized pieces (you can pound the chicken to about 1/4" thick also)
  2. In a skillet on medium-high heat, heat olive oil. Add the garlic and cook for about a minute
  3. Add the chicken, the freshly squeezed orange juice and zest
  4. Simmer until sauce thickens. Serve and Enjoy!

Makes 4 servings
