Recipe from David Rocco, but I omitted the salt, black pepper, flour, butter, almonds, and mint/basil |
- 2 lbs skinless chicken breasts
- 3 tbsp olive oil
- 2 whole garlic cloves
- Zest and juice of 1 orange
Directions:
- Cut up chicken breasts into bite-sized pieces (you can pound the chicken to about 1/4" thick also)
- In a skillet on medium-high heat, heat olive oil. Add the garlic and cook for about a minute
- Add the chicken, the freshly squeezed orange juice and zest
- Simmer until sauce thickens. Serve and Enjoy!
Makes 4 servings
