Eggplants can be rather bitter, I suggest brining the eggplant first.
Ingredients:
- 1 eggplant
- Olive oil
- Any seasonings or ingredients you desire (I used my pesto sauce, sun dried tomatoes, cottage cheese, hot house tomatoes, egg, apples and cinnamon)
Directions:
- Preheat oven at 375 F
- Slice Eggplant and put on wax paper on a baking sheet
- Brush both sides of eggplant slices with olive oil and bake for 10-15 minutes
- Take eggplants out of oven and flip them over. Top with whatever seasonings or ingredients you desire. Then bake them for another 10-15 minutes
