Spinach and Basil Pesto
Can be stored in the freezer in an ice cube tray for easy access
Ingredients:
- 2 cups spinach
- 1 cup fresh basil
- 1/2 cup walnuts
- 1/2 cup mozzarella or parmesan cheese
- 1/2 cup extra virgin olive oil
- 3 cloves of garlic (minced)
Directions:
- Pulse spinach and basil in food processor then mix the rest of the ingredients except the olive oil
- When all the ingredients are combined, pour in the olive oil as the food processor is mixing. Mix for a couple minutes to make sure all ingredients are combined.
