Ingredients:
- 2 cups Jamie Eason vanilla protein powder
- 1 tsp baking soda
- 1/4 cup coconut milk
- 1/2 teapsoon salt
- 2 eggs
- 3 tbsp honey
- 2 tsp vanilla extract
- 1/2 cup coconut oil
- 2 teaspoons lime zest
- 3/4 cup fresh blueberries
Lime Glaze:
- 1/2 tbsp fresh lime juice
- 1/4 tsp honey
Directions:
- Preheat oven to 350 degrees. Line a loaf pan with parchment paper and set aside.
- In a bowl, toss the blueberries in a tablespoon of the protein powder (prevents the blueberries from sinking)
- Whisk together the wet and dry ingredients separately.
- Combine the wet and dry ingredients until smooth. Do not over mix.
- Fold in the blueberries
- Pour batter in the pan and bake for 40-60 minutes. Test with toothpick.
- Cool bread on a cooling rack.
- Mix the lime glaze ingredients together and pour on top.
