Oreo-stuffed Cookies

I made these for my cheer team for Valentine's Day and they were a huge hit! Baked goods were given to the boys anonymously and everyone kept asking who made the oreo-stuffed cookies :p. They didn't turn out as visually appealing as I hoped, but they tasted amazing!
They were crunchy and a little chewy at the same time because they were made with oatmeal. Check out the recipe below! Clean oreos recipe found from chocolatecoveredkatie.com



Ingredients:

  • 2 cup all purpose flour
  • 2 + 1/2 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup coconut oil
  • 1 + 1/2 cup truvia
  • 2 large eggs
  • 4 teaspoons vanilla extract
  • 2 cups dark vegan chocolate chips
  • Clean Oreos
Directions: 
  1. In one bowl, combine all the dry ingredients. 
  2. In a separate bowl, combine all the wet ingredients. It may be easier to melt the coconut oil first, but leaving it in chunks will make the cookies more crunchy.
  3. Add the dry ingredients into the wet ingredients and mix well.
  4. Fold in chocolate chips 
  5. Using your hands, take a teaspoon amount of dough and roll into a ball. Flatten the dough and place a chunk of oreo inside (I broke each oreo into 4 pieces). Add some more dough on top so that the oreos are in the middle
  6. Bake for 10-12 minutes at 350F or until golden brown. Allow cookies to cool for 10 minutes.
