Candied Yams

Ingredients:

  • 2 yams
  • 3 tablespoons almonds, chopped
  • 1/2 teaspoon cinnamon
  • 2 teaspoons coconut oil or butter
  • truvia (optional)
  • marshmallows (optional)
Directions:
  1. Slice yams down the middle lengthwise to create an eye-shaped opening for the rest of the ingredients to fit. If the yams are too stiff to cut, poke holes into yams with a knife and microwave for 4 minutes on medium heat, flipping yams in the middle of cooking time. 
  2. Mix the rest of the ingredients together in a bowl and stuff inside the yams
  3. Bake at 400F for about 40 minutes or until the yams are soft. Top with the optional marshmallows and enjoy!






Here's another way to make candied yams with the same ingredients:
  1. Cook yams until tender and mash them using a potato masher (I chose to leave the skin on, but you may want to peel the yams first). 
  2. Place into any baking dish you would like and top with marshmallows. Broil the marshmallows just until they become golden brown. This makes an interesting presentation, and the kids would love to eat this!
